Crock Pot Swamp Potatoes are really a whole meal in one pot! With the kielbasa, green beans and seasoned potatoes, it’s so simple and so filling! A crowd pleaser!

A SIMPLE CROCK POT MEAL

If these crazy named Crock Pot Swamp Potatoes sound familiar to you, it’s because they went crazy viral on TikTok a couple months ago thanks to Southern Frugal Momma. So I cannot take credit at all for this recipe, but once I saw it, I knew I had to try it out. I have no idea where folks come up with these names. I am convinced people will come up with the craziest recipe names so they get attention. I guess it worked though because we are all over here making it – ha! I mean, they’re ugly as sin, so the name fits but they sure are delicious and it really is a whole meal in one with the smoked sausage, potatoes and green beans.

What to serve with Swamp Potatoes?

While I think these are a whole meal all by themselves, I think these are great with a side salad or some sliced French bread, or both!

What else can I add to this mixture?

Add sliced bell peppers, mushrooms, or carrots for extra vegetables. Top the dish with shredded cheddar cheese, grated Parmesan, or crumbled bacon. Fresh herbs like parsley, chives or green onion make great garnishes.

What potatoes can I use in place of yellow potatoes?

If you don’t have Yukon Gold potatoes, you want to choose some that will hold up well while cooking in the Slow Cooker. Red potatoes hold up nicely. However, russet potatoes might get a tad too mushy and may become mashed potatoes while cooking.

What can I use instead of Italian seasoning mix?

If you don’t have Italian seasoning, you can use Ranch Seasoning instead. Or try your own favorite seasoning mix. Some users commented on that original video that they would use cajun seasoning. Just be careful how much salt you are adding. You can always leave out any additional salt and add more in at the end after you’ve tasted it.

How to store leftovers?

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave in 30-second intervals or in a skillet over medium heat until warmed through.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • yellow potatoes– I shared a few other potato options that you could use in place of yellow potatoes if needed above in the Frequently Asked Questions section.
  • salt, pepper, garlic powder, onion powder and smoked paprika – this is the standard seasoning I use for just about everything. In this case I went with smoked paprika to give it a little bump of flavor but the original recipe uses plain paprika so go with what you have on hand.
  • yellow onion – don’t like onions? Just leave them out. I think a diced shallot would work wonderfully here if you don’t want a strong onion flavor.
  • smoked sausage– Andouille, kielbasa, or turkey sausage work well in this recipe. I used beef smoked sausage.
  • canned green beans – The canned green beans do kind of fall apart a little since they get so tender. The original recipe called for fresh green beans that she snapped in half and she put those on the bottom first. So you can use fresh (about 1.5 pounds) or even frozen (see my video in the recipe card below where I make it with fresh green beans so you can see how that is done. I saw a few different takes on this recipe from other users and I decided to go with canned to keep it easy. Or if you don’t like green beans, just leave them out.
  • packet Italian dressing seasoning mix– you can use whatever brand you enjoy, or if you have Homemade Italian dressing seasoning, you can use that instead. Another option for this mix is using some Ranch Seasoning instead. Also, some folks commented on the original recipe video that they thought cajun seasoning would work great here.
  • unsalted butter– you could use salted butter if needed, as it doesn’t truly contain all that much salt in it. If you would like to cut the amount of butter used in half, it should still turn out nicely.

HOW TO MAKE CROCK POT SWAMP POTATOES:

Wash and quarter the potatoes, then place them in the bottom of a slow cooker. Sprinkle the potatoes with salt, black pepper, garlic powder, onion powder, and smoked paprika.

Add the diced yellow onions on top of the potatoes and mix everything together.

Layer the sliced smoked sausage over the potatoes and onions. Drain the green beans and add them to the slow cooker.

Sprinkle the Italian dressing seasoning mix evenly over the top of the ingredients. Place the stick of unsalted butter on top, leaving it whole.

Cover the slow cooker with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender. Serve and enjoy!

Ingredients

  • 2 pounds yellow potatoes (cut into quarters, see notes below)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (or regular paprika)
  • ½ cup diced yellow onions
  • 12 ounce package smoked sausage, sliced
  • 2 (14.5 ounce) cans cut green beans (drained well, see notes below)
  • .6 ounce packet Italian dressing seasoning mix
  • ½ cup (1 stick) unsalted butter

Instructions

  • Scrub 2 pounds yellow potatoes with water and then cut them into quarters. Then place them in the bottom of a slow cooker.

  • Drain 2 (14.5 ounce) cans cut green beans and add them to the slow cooker.

  • Sprinkle .6 ounce packet Italian dressing seasoning mix evenly over the top of the ingredients.

  • Place 1/2 cup (1 stick) unsalted butter on top (I leave it whole but you can slice it up if you prefer.)

    We normally make something similar on the stove but my family was raving about this recipe! It was much easier and they said they want me to make it like this all the time. I used fresh beans and didn’t have Italian seasoning so I left it out. Still tons of flavor! Thank you!

  2. As a diabetic potatoes aren’t good for me. But sweet potatoes are a better alternative. Can I use them instead? How would I adjust the recipe? Thanks for your help with this.

    1. Hi Darlene, I am sure you could! I haven’t personally tested it with sweet potatoes though so I can’t really give you a time recommendation. I probably wouldn’t cut them too large. I think you’ll have to kind of experiment and play it by ear with the timing. Start with the time above and then go from there depending on doneness 🙂

  5. I would love to make this, but in my instant pot. What changes should I make to adjust for that? Any suggestions?

    1. That sounds amazing. I have that in the house, and not an Italian seasoning packet. Now I can make this tonight!

    1. It wouldn’t actually make it creamy unfortunately. The milk would just sit in the bottom of the crock pot & curdle. If you want to make creamy, I would suggest adding a dollop of sour cream at the end 🙂 Personally, I don’t think it needs any creaminess though.

    Absolutely Delicious and easy! Will put this in our rotation list. Used red potatoes bc that’s all I had. Put creamy melt Parmesan cheese on top with green onions. Family loved it.

  7. I would like to make this for my elderly mother-in-law, but sub in chicken thighs to “healthy” it up a bit. She has diabetes and the processed sausage is not good for her. Do you think that would work?

    1. Chicken sausage would work well too (the brand Amylu makes some good ones.) Chicken thighs can take longer to cook so you don’t want everything else getting mushy while waiting on the chicken. Smoked sausage is already cooked which is why it works well here, we’re just heating it up. You could try sautéing the diced chicken thighs a bit first to get the ball rolling on cooking it before adding it to the slow cooker. Let me know if you give it a try! I would love to know how it goes for you.

    I made this recipe but cut it in half as there is only me and I used Kielbasa. Love that it uses String Beans – but I only had frozen ones so I used them. OMG – great recipe – will make it again. Thanks for posting.
