Tasty and simple, Pickles in a Blanket are made with flaky crescent rolls with a creamy cheese filling and mini dill pickles inside. A fun and slightly different snack or appetizer!

Pickles are having a moment right now! Pickle flavored everything from chips to Pickle Pasta Salad! If you are a pickle lover then these Pickles in a Blanket are for you! Pickles in a Blanket are like Pigs in a Blanket, but even better using pickles instead of hot dogs or sausages. Crunchy bacon with a cream cheese and cheddar cheese mixture with crunchy baby dill pickles inside of some buttery, fluffy, crescent rolls. I love these as a fun snack or to whip up some for an appetizer when company comes over. Everyone is surprised how much they love them!

How can I change things up?

You can try a flavored cream cheese with these Pickles in a Blanket.

Can I make these spicy?

Sure a little heat with these tangy pickles would be nice. If that’s what you want, add a dash or two of red pepper flakes.

Can I use different pickles?

Yes. If you want to change things up, try using larger pickles. Just be sure to cut them smaller so they can easily fit in the dough. Pick any flavor of pickle that you like.

What can I use if I don’t have crescent rolls?

If you don’t have a can of crescent rolls, try using puff pastry instead.

How long do leftovers last?

Transfer any leftovers to an airtight container and keep them in the fridge for up to 3 days.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • crescent rolls– grab a tube or make some Homemade Crescent Roll dough.
  • mini dill pickles– be sure to pat them dry first. Also, I think it’s important to share that these small dill pickles can have different names. When in the pickle aisle, you may seem them as mini dill pickles, cocktail pickles, gherkins, petite dills or baby dills. They’re all the same thing and any of them would work in this recipe. 
  • cream cheese – softened to room temperature. If you forgot to pull it out early enough, you can Soften Cream Cheese Quickly with some tips from my post.
  • bacon pieces– you can either cook and crumble some fresh bacon or grab the bag from the salad aisle of the bacon pieces.
  • shredded cheddar cheese – use any kind of cheese you like here. Want a touch of heat? Try using Pepper Jack cheese.
  • egg
  • milk – you could use water. This is just for the egg wash to use on top of the crescent rolls.
  • dried dill – this is optional but goes really well with the pickle flavors.

HOW TO MAKE PICKLES IN A BLANKET:

Preheat the oven to 350F degrees. Line a baking sheet with parchment paper or spray with nonstick cooking spray. Unroll both tubes of crescent rolls. Slice each one down the middle so that you have 32 strips. In a small bowl, mix together the softened cream cheese, bacon pieces and shredded cheddar cheese. Spread the cream cheese mixture onto each crescent roll (about a Tablespoon onto each strip.) Add a pickle to the wide part of the crescent roll strip.

Roll the crescents up from the wide end and place onto the prepared baking sheet. In a small bowl, add the egg and milk and whisk until combined. Sprinkle each one with a little dried dill. Bake on the middle rack for about 12-15 minutes until golden.

Ingredients

  • 2 (8 ounce) tubes crescent rolls
  • 32 mini dill pickles, patted dry
  • 4 ounces (1/2 block) cream cheese, softened to room temperature
  • ¼ cup bacon pieces
  • 1 cup shredded cheddar cheese
  • 1 egg
  • ½ Tablespoon milk (or water)
  • dried dill

Instructions

  • Preheat the oven to 350F degrees. Line a baking sheet with parchment paper or spray with nonstick cooking spray.
  • Unroll 2 (8 ounce) tubes crescent rolls. Slice each one down the middle so that you have 32 strips total.
  • In a small bowl, mix together 4 ounces (1/2 block) cream cheese, softened to room temperature, ¼ cup bacon pieces and 1 cup shredded cheddar cheese.

  • Add a mini pickle to the wide part of the crescent roll strip.
