This easy Sloppy Joe Cheddar Bay Biscuit Casserole is a hearty, family-friendly dinner made with savory sloppy joe beef and topped with a layer of cheesy, garlicky biscuits!

Sloppy Joe Cheddar Bay Biscuit Casserole has become a go-to meal. It is enjoyed even by the picky eaters! It’s easy to customize to make with what you have and it’s filling to feed all the bellies around the dinner table. It’s made with a savory, sweet, tangy sloppy joe filling that gets topped with fluffy, cheesy Cheddar Bay biscuits. Simple, quick and hearty!

FREQUENTLY ASKED QUESTIONS: 

If I just use one pound of ground beef, do I change the pan size?

You can use a pound of beef instead of two and you don’t need to use a different size dish. You can still use a 9×13-inch baking dish. This casserole will just be a little extra saucy. You can also just use one box of biscuit mix (you will have to cut the additional biscuit ingredients I have listed below in half.)

What side dishes should I serve with this casserole?

Any of your favorites. When I made this, I served it with steamed cut green beans, but, any steamed veggies or a salad should work nicely. I always try to throw a vegetable in there when I can. I think some Maple Glazed Carrots too!

What if I don’t have Cheddar Bay Biscuit Mix?

The only thing that makes Cheddar Bay Biscuit mix different is the garlic seasoning packets that come with it. That is it. The biscuit mix has no other additional flavor. It is simply plain biscuit mix so don’t feel like you are missing anything if you can’t find it.

You can easily create your own by using 4 cups of Bisquick = two boxes. Then just use a couple of teaspoons of garlic powder and a little dried parsley for the two packets of herb seasoning mix that usually comes with the Cheddar Bay Biscuit Mix.

What else can I add to this Sloppy Joe Cheddar Bay Biscuit Casserole?

You can add veggies to the sloppy joe mix if you desire. You can add ½ cup chopped yellow onion and/or ½ small green pepper seeded and diced to the ground beef while cooking.

Could I just use Manwich instead of a homemade sloppy Joe sauce

You can take a short cut and buy two cans of Manwich (one can for each pound of meat) instead of preparing the sauce yourself. All you need to do is add it to the cooked ground beef.

How do I store leftover Sloppy Joe Cheddar Bay Biscuit Casserole?

Once cooled, any leftovers can be stored in an airtight container and should be kept in the fridge for up to 3-4 days. You can freeze the leftovers in a freezer safe container for up to 3 months. Thaw leftovers in the fridge overnight before reheating.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • ground beef– you can use just one pound if that is all you have available. Additionally, you can use ground turkey or ground chicken instead of beef. You don’t need to adjust any other ingredients, it will just be a little more saucy.
  • garlic– fresh minced garlic will always give you the best flavor but the jarred stuff can be used in a pinch.
  • tomato sauce – the next few ingredients below are all to make a homemade sloppy Joe sauce. If you want to make this even easier, just skip the sauce ingredients and grab a can of Manwich. You will use once can for each pound of ground beef you are using.
  • Worcestershire Sauce
  • ketchup
  • yellow mustard
  • light brown sugar
  • Red Lobster Cheddar Bay Biscuits– if you don’t want the biscuit layer to be as thick, you can use just one box of biscuit mix.
  • cold water – used to make the biscuits
  • shredded sharp cheddar cheese – you can use whatever cheese you prefer here.
  • salted butter– used for the herb butter. You could use unsalted butter and add a pinch of salt if you think it’s necessary, later.

HOW TO MAKE SLOPPY JOE CHEDDAR BAY BISCUIT CASSEROLE

Add the ground beef to a large skillet. Cook and crumble the beef over medium high heat until no longer pink. Drain excess grease and put back into the skillet over medium heat.

Add the garlic and stir into the beef and cook for about one minute.

Add the onion powder, salt, pepper, tomato sauce, Worcestershire sauce, ketchup, mustard and brown sugar.

Stir to combine and allow to simmer for 5 minutes. Add the beef mixture to a 9×13-inch inch casserole dish and spread out evenly across the bottom.

Sprinkle ½ cup shredded cheese over the beef mixture.

Preheat the oven to 350F degrees. In a large bowl, make the biscuits according to the package instructions. Set aside the herb seasoning packets for later. Pour both packages of biscuit mix into a large bowl, add in 1 1/2 cups cold water and one cup shredded cheddar cheese. Stir until combined (batter will be sticky.) Divide the biscuit batter into twelfths and place them in four rows with three biscuits per row.

Sprinkle ½ cup shredded cheddar cheese over the top of the biscuits and bake uncovered for 30 minutes or until the biscuits are fully baked.

Add ½ cup butter to a small microwave safe dish and melt. Or into a small sauce pan to melt. Add the seasoning packets that came along with the biscuits. Stir to combine.

Once baked, remove from the oven and pour the melted butter over the top of the biscuits. 

Allow the casserole to cool slightly before serving with a sprinkling of fresh chopped parsley!

  • 2 (11.36 ounce) boxes Red Lobster Cheddar Bay Biscuits (see notes below)
  • 1 ½ cups cold water (to make the biscuits)
  • 1 ½ cups shredded sharp cheddar cheese (divided use)
  • ½ cup (1 stick) salted butter (for the herb butter)

Instructions

  • Preheat the oven to 350F degrees. Get out a 9×13-inch casserole dish (note: you don't need to spray it with cooking spray.)
  • Add 2 pounds ground beef to a large skillet. Cook and crumble the beef over medium high heat until no longer pink. Drain excess grease and put back into the skillet over medium heat.

  • Add 3 cloves garlic, minced and stir into the beef and cook for about one minute (or until fragrant.)
  • Add ½ Tablespoon onion powder, ½ teaspoon salt, ¼ teaspoon ground pepper, ½ cup tomato sauce, 1 Tablespoon Worcestershire Sauce, 1 cup ketchup, 2 Tablespoons yellow mustard and ½ cup light brown sugar, packed. Stir to combine and allow to simmer for 5 minutes.

  • Sprinkle 1/2 cup shredded sharp cheddar cheese over the beef mixture.

  • Open 2 (11.36 ounce) boxes Red Lobster Cheddar Bay Biscuits. Set aside the herb seasoning packets for later.
    Pour both packages of biscuit mix into a large bowl, add in 1 1/2 cups cold water and one cup shredded cheddar cheese. Stir until combined (batter will be sticky.)

  • Divide the biscuit batter into twelfths and place them in four rows with three biscuits per row (or you can spread it out into one layer – whatever is easiest for you.)

  • Sprinkle remaining ½ cup shredded cheddar cheese over the top of the biscuits and bake on the middle oven rack (uncovered) for 30 minutes or until the biscuits are fully baked.
    NOTE: Oven times can vary greatly depending on your oven so go by doneness not just the time. Biscuits should no longer be sticky or wet in the middle. Use a toothpick if necessary.
  • Add ½ cup (1 stick) salted butter to a small microwave safe dish, cover with a paper towel, and microwave in short increments until melted. Or put it into a small sauce pan on the stove on low to medium heat to melt.
    Add the garlic herb seasoning packets that came along with the biscuits into the melted butter. Whisk to combine.
  • Once baked, remove from the oven and pour the melted butter over the top of the biscuits (making sure to coat all the biscuits.)

  • Allow the casserole to cool slightly before serving. Optional: Sprinkle the top with a little dried parsley.

  • This recipe works with just one pound of ground beef. You don’t have to adjust any other ingredients, it will just be a bit saucier.
  • If you don’t want a thick biscuit mixture, you can just use one box of biscuit mix. You will need to cut the other biscuit ingredients in half. 
  • If you want to make this even easier, you can skip the homemade sloppy Joe sauce and use a can of Manwich for each pound of ground beef used.
