A TWIST ON CLASSIC BEEF TIPS

This Crock Pot French Onion Beef Tips recipe takes simple ingredients and turns them into an incredibly flavorful meal. I love finding an easy recipe that I can toss in the slow cooker and go about my day. You can brown the beef or not (depending on how much time you have in the morning.) Simple dinners are my specialty and this tender beef is just that! It was an enormous hit with my whole family!

Can I make these French Onion Beef Tips in the oven instead?

Yes. Preheat your oven to 400°F.
Season the beef tips with seasoning. In a large oven-safe pot or baking dish, add the seasoned stew meat.
In a medium bowl, whisk together the soup, soup mix and seasoning mixes until smooth. Pour the mixture over the beef tips, making sure everything is coated evenly.
Cover tightly with a lid or aluminum foil and bake on the middle rack for about 1 hour, until the beef is tender.

Can I skip the searing step?

It isn’t necessary to sear the meat before adding it to the crock pot. It adds color and additional flavor but if you are short on time, just skip it. 

What other cuts of meat could I use?

Since this recipe cooks low and slow, you can easily use a more affordable cut of beef like chuck roast or round steak. If you’d like something with a little extra flavor but still budget-friendly, flat iron steak is a great choice, it stays tender and feeds just as many people.

What should I serve with French Onion Beef Tips?

I love serving beef tips over rice so it can soak up all that delicious gravy! They’re also amazing with my Million Dollar Mashed Potatoes or a bowl of buttery egg noodles. For a tasty veggie side, try pairing them with my Maple Glazed Carrots or simple Green Beans like I did. A slice or two of crusty bread or some Dinner Rolls to soak up all that gravy always works.

Is this salty?

If you are sensitive to salt or find that recipes with canned goods or packet seasonings make food too salty then you will find this recipe salty. I would suggest, where possible, to use low or no sodium options. One way to control the salt in your food is to make your homemade seasonings. For example, I have a recipe for Homemade Onion Soup Mix you can use that you can make salt free.

What’s the best way to store any leftovers?

Store those leftovers in an airtight container for up to 3 days in the fridge or freeze up to 3 months in an appropriate container.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • beef stew meat– above, in the Frequently Asked Question section, I shared a few other meat options to try to use if you need them.
  • vegetable oil – you could use olive oil or avocado oil as well.
  • yellow onion – cut into thin slices. You can use a white onion instead of yellow if needed.
  • French Onion Soup– I recommend low or no sodium versions since this can get salty quickly between the canned soup, soup mixes, and the sauce mix.
  • Beef Onion Soup Mix– grab a packet of your favorite or use some Homemade Onion Soup Mix. You can also use regular onion soup mix if that is what you have on hand.
  • Au Jus sauce mix– use whatever brand you enjoy. Again, definitely use low sodium if you need to.
  • unsalted butter
  • shredded Mozzarella and Provolone Cheese– Typically, French Onion Soup calls for Gruyere cheese, but it’s pricier and harder to find by me sometimes. I like Mozzarella and Provolone, but feel free to experiment with other kinds of melty cheeses.

HOW TO MAKE CROCK POT FRENCH ONION BEEF TIPS:

Heat a heavy bottomed skillet over medium-high heat. Add the vegetable oil and swirl around to evenly coat the bottom. Add the beef stew meat and break into smaller pieces. Sprinkle the ground black pepper over the top of the meat and allow the meat to sear for 1-2 minutes or until the meat can lift without sticking. Sear the other side for the same amount of time.

Spray the bottom of a crockpot with non-stick spray. Add the onions in an even layer on the bottom.

Add the beef evenly on top of the onions. Sprinkle the Au Jus mix over the top of the beef.

Sprinkle the Beef Onion Mix over the Aus Jus. Pour the French Onion Soup over the top of everything.

Place 5 Tablespoons of butter on the top. Cover and cook on low for 4-6 hours, or until the beef is tender. When there is approximately 30 minutes left in cooking, sprinkle the two cups of cheese over the beef.

Ingredients

  • 2 Tablespoons vegetable oil
  • 1 pound beef stew meat
  • 1 ½ teaspoons ground black pepper
  • 1 yellow onion, cut into thin slices
  • 1 packet low sodium Au Jus gravy mix (see notes below)
  • 1 packet Beefy Onion Soup Mix (can use low sodium, see notes below)
  • 1 (10.5 ounce) can French Onion Soup (can use low sodium, see notes below)
  • 5 Tablespoons unsalted butter, sliced
  • 2 cups shredded Mozzarella and Provolone Cheese (or shredded Gruyere cheese)

Instructions

  • Heat a heavy bottomed skillet over medium-high heat. Add 2 Tablespoons vegetable oil and swirl around to evenly coat the bottom.
  • Add 1 pound beef stew meat and break up into smaller pieces. Season the meat with 1 ½ teaspoons ground black pepper and allow the meat to sear (get brown) for 1-2 minutes or until the meat can lift without sticking. Brown the other side for the same amount of time then remove from heat.
    NOTE: You aren't cooking all the way through, just getting a nice brown color on both sides.

  • Add 1 yellow onion, cut into thin slices in an even layer on the bottom.

  • Pour 1 (10.5 ounce) can French Onion Soup over the top of everything.
  • Place 5 Tablespoons unsalted butter, sliced on the top.

  • When there is approximately 30 minutes left in cooking, stir the beef then sprinkle 2 cups shredded Mozzarella and Provolone Cheese over the beef. Cover and allow it to melt before serving.
