Ham Fried Rice
A super easy and filling recipe for Ham Fried Rice. Packed full of smoked ham, tender rice, peas and carrots. Whips up in minutes!
A TWIST ON PLAIN FRIED RICE
This is probably one of my absolute favorite quick meals to make. It really is a whole meal in itself. It works great when I have leftover ham too! Of course you could also serve it with some of your Asian favorites like Sesame Chicken, General Tso’s Chicken, Orange Chicken, or some Hibachi Steak. This requires so few ingredients and you can really make it so quickly that it’s perfect for those busy weeknights!

FREQUENTLY ASKED QUESTIONS:
I know a lot of people are cooking with cauliflower these days. I’ll be honest, I really didn’t like it at all and it doesn’t taste like rice to me at all but to each his or her own. I am not familiar with substituting it in recipes like this but I’m sure it would totally work.
Yes, I think this would work nicely with whatever rice you already have prepared, like brown rice.
You can use spam, bacon, chicken, beef or no meat at all.
I love this as simple as it is. However, I’ve heard some people like to add shredded cabbage or bean sprouts when making it.
Leftover fried rice with ham can be stored in an airtight container and can be kept in the refrigerator for up to 4-5 days. You can freeze leftovers for up to 3 months in a freezer safe container.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)
- onion – I think a shallot would be a super delicious substitute. It adds a very light onion and garlic flavor!
- salt and pepper – this is really going to be to your tastes. You can certainly use other seasonings that you prefer.
- diced ham – this is a great way to use leftover ham too!
- eggs
- cooked rice – I just use white rice but you can use your favorite rice here. Whatever is easiest for you!
- frozen peas and carrots
- soy sauce – I always prefer a light soy sauce. I think it’s much easier to control the salt this way. The ham already has salt in it too. You can always add salt but you can’t take it out.
- green onions – green onions are a must for me but if you aren’t a fan, you can leave them out!

HOW TO MAKE HAM FRIED RICE:
Dice onion. Heat oil in a large nonstick skillet over medium-high heat. Add in diced onion. Season with salt and white pepper. Cook and stir until onions are soft and translucent. Then stir in diced ham. Cook until ham begins to brown and get a little crispy. Remove mixture from pan. Over medium heat, add in beaten eggs to skillet. Scramble eggs and season with a little salt and pepper.
Once eggs are cooked, stir in cooked rice. Then add soy sauce. Note: I like using light soy sauce because it has a lower sodium level. So I can add in additional sauce without worrying it will become too salty. Add in additional soy sauce depending on your tastes.

Then, stir in frozen peas and carrots. Stir, then add back in onions. Turn temperature down to medium-low. Stir again and cover to allow peas and carrots to get tender. Add sliced green onions on top just before serving.

Ham Fried Rice
Ingredients
- 2 Tablespoons olive oil
- 1 small onion, finely diced
- ¼ teaspoon white pepper (can use black pepper)
- 8 ounce package diced ham (1 cup)
- 2 large eggs, beaten
- salt and pepper, to taste
- 3 cups cooked rice
- 2-3 Tablespoons lite soy sauce (low sodium)
- 1 cup frozen peas and carrots
- 3-4 green onions, thinly sliced
Instructions
- Heat 2 Tablespoons olive oil in a large nonstick skillet over medium-high heat. Add in 1 small onion, finely diced. Season with 1/4 teaspoon white pepper.
- Cook and stir until onions are soft and translucent. Then stir in 8 ounce package diced ham (1 cup).

- Cook until ham begins to brown and get a little crispy. Remove mixture from pan and place in a bowl or on a plate. Over medium heat, add in 2 large eggs, beaten to skillet. Scramble eggs and season with a little salt and pepper, to taste.
- Once eggs are cooked, stir in 3 cups cooked rice. Then add 2-3 Tablespoons lite soy sauce. Note: I like using light soy sauce because it has lower sodium to help control the salt. Start with 2 Tablespoons soy sauce and you can always add more to taste.

- Then, stir in 1 cup frozen peas and carrots. Stir, then add back in cooked onions and ham. Turn temperature down to medium-low. Stir again and cover to allow peas and carrots to get tender.
- Remove from heat and add 3-4 green onions, thinly sliced on top just before serving.

So I came across this recipe last night when my child sighed at the mention Of ham for dinner. I felt the same, so I googled what ingredients I had and came across this gem. I took a risk since my son isvery picky but he LOVED it!!! I did too! It was absolutely incredible. I am a huge fried rice fan, so to know that I can make my own, healthier than take out version, I am very pleased! Awesome recipe! Thank you!
