Ground Beef Stroganoff
This is the best Ground Beef Stroganoff. It’s a flavor-filled creamy hamburger gravy that is delicious served over egg noodles. Budget friendly, family friendly!
ALSO KNOWN HAS HAMBURGER STROGANOFF
Beef stroganoff with ground beef is definitely a comfort food dish. For me, it’s up on the list near fried chicken and okra. I love the humble roots of stroganoff. It isn’t pretentious, it uses simple ingredients and it is a cheap dish that can easily feed your entire family. Just some ground beef, seasonings, an easy gravy mix and boom – dinner is served!

I have made this recipe for years and I am sorry that I waited so long to say thank you for such an amazing keeper of a recipe! It’s an easy version of a childhood favorite, and I almost always have the ingredients on hand! I get asked for this recipe a lot!

FREQUENTLY ASKED QUESTIONS:
I always serve ground beef stroganoff on top of egg noodles. Then I like to have a nice vegetable side dish like some Maple Glazed Carrots, or Italian Green Beans.
Sour cream is a pretty integral in flavor to beef stroganoff. You can substitute with plain Greek yogurt. Or you can leave it out if you just really don’t like the taste. In this recipe I use cream of mushroom soup so it is plenty creamy without the sour cream if you really just can’t stand the flavor.
You want to use one that has some fat. That’s where you get good flavor. So I generally use an 85/15 ground beef. You don’t need anything fancy here. Use what is within your budget. If you want to avoid draining any grease, try using a lean meat like 90/10.
Leftovers can be stored in a covered container in the refrigerator for up to 3 days. I don’t recommend freezing as sometimes the creamier ingredients tend to separate when you go to reheat it.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)
- ground beef – if you use a lean meat, you won’t really have any grease to drain. You could also easily make this with ground chicken or turkey.
- onion – if you don’t like onion, just leave it out.
- garlic – this recipe works well with freshly minced garlic or the jarred garlic (whichever is easiest or whichever you prefer.)
- salted butter – you can use unsalted butter.
- all-purpose flour
- beef broth – if you want to keep the sodium down, try using low or no salt beef broth.
- sour cream – this is a love/hate ingredient but it is essential to any stroganoff recipe so I don’t recommend skipping it. You could substitute with plain Greek yogurt or creme fraiche.
- cream of mushroom (or chicken) soup – I have recipe for Homemade Cream of Mushroom Soup and Homemade Cream of Chicken Soup if you prefer homemade.
- egg noodles

HOW TO MAKE GROUND BEEF STROGANOFF:
Bring a pot of water to boil and begin to cook egg noodles according to package directions. In a large skillet over medium high heat, brown ground beef along with the onions and garlic until thoroughly cooked. I like to leave chunks of ground beef and not break it up too small. Drain ground beef to remove excess grease from pan. Put pan back on stove over medium heat (don’t add the ground beef back in yet.) Add butter to pan and let it melt.

Then add flour to pan, whisk and let it absorb butter. Now add beef broth and whisk vigorously to remove any lumps, turning the heat up to high, bringing it to a boil for 2-3 minutes until you see it thicken slightly.

Bring temperature down to medium and whisk in sour cream and cream of mushroom soup. Stir until mixture is thoroughly incorporated. Add salt and pepper. Keep tasting mixture until it is seasoned the way you like. I probably use a good teaspoon and half or more of salt and pepper. If it gets too thick on you, just add a tad more beef broth. Add ground beef back to mixture. Stir and then allow to simmer for about 5 minutes.

Serve over egg noodles.

Notes
- This can be served over rice or over toast or however you enjoy it!
- We like to serve this with a salad or steamed veggies and sometimes some buttered bread.
- This can be made with ground sausage, ground chicken or ground turkey. If making with ground chicken or turkey, you may want to use chicken broth instead of beef broth.

I have made this three times in the last couple months, perfect cold weather dish. The very essence of comfort food!!
This was a delicious recipe and will want to make it again
I made this for dinner tonight. I already had Impossible Beef so I used it. I served it over noodles. My husband and I liked it. I will make this recipe again.
Perhaps a little more hamburger to sauce. Otherwise, great! I’ll use this recipe again 🙂
Delicious!
So Easy.
Made according to recipe.
Used Greek yogurt instead of sour cream.
Love this recipe. I come back to it every time!!
Fantastic recipe! Easy, quick and the family loved it!
Thank you for sharing this recipe.
Excellent! Our favorite recipe from this site!
I wanted to cook this for tonight, but I don’t have cream of mushroom, is there any anything else I can do?
cream of chicken is what I used cuz I too didn’t have cream of mushroom and didn’t want to run to the store.
I made this for dinner tonight, and it is delicious! I did add Worcestershire sauce to it, and served it over rice, with corn on the cob and broccoli. This is now my recipe for hamburger stroganoff! May God bless you, and thank you for sharing.♥️
My hack: sliced fresh mushrooms(pound) and sautéed in olive oil and garlic and set aside in a bowl in which I added a can of cream of chicken… seemed to added another layer…
Amazing!!!!
Made this last night for dinner. Definitely an easy recipe to make and made more than enough for my wife and I. I used the cream of mushroom soup with roasted garlic and added about 2 tsp of Worcestershire sauce for a little more flavor. Yes, I tasted it before adding the Worcestershire and it was delicious. Just wanted a bit more flavor.
loved it the only thing is I didn,t have sour cream don’t know how much of a differance but wow it was Excellent !!!! thanks
Very good stroganof! I just added some cut mushrooms with the onion and ground beef plus some garlic powder to enhance the dish.
My family loves this! even my picky 4 yr old.
Made this for the 1st time. Will put it on our rotation. Reminded me of the poor mans stroganoff my mom made when I was younger. Kids liked it too.
Delicious! Whole family devoured it!
Dang, girl! This is fantastic. I have never ever liked beef stroganoff but this is superb. My grandson AND son-in-law asked for it to be on regular rotation. You have never failed me in soooooooooooo many years! Love ya!
Awww Kelli, thank you so much! That really means the world!
This recipe was great and easy! Definitely will be making this again
I used 85/15 ground beef. I ended up browning another pound of ground beef and adding it in. I also added more sour cream to the final product. Love how it turned out!
I honestly just came across this recipe because I had a massive amount of sour cream and wanted recipes to help me use it. I’m not a huge beef eater, I prefer chicken most of the time, but the reviews made me want to give it a try. I’m so glad I did! The hardest part was the stinging of my eyes when cutting the onion, this was such an easy meal to put together and it was better than I anticipated! My husband ate 3 servings and even I got myself seconds, and we still have some leftovers in the fridge which I’m sure he will devour tomorrow with glee. I will definitely be making this again for us and for others!
Absolutely excellent! Didn’t change a thing! Thanks so much
Excellent !! My family just loved this recipe . Thank you . Didn’t change a thing, just quadrupled it . And it was GONE, every drip and drop within 2 hours lol.
Absolutely delicious and super easy to make. I added sliced mushrooms after the onion and garlic just for some extra flavor and texture. I will definitely be making this again!
You are so sweet Amy – thanks so much! I sure do appreciate you taking the time to come back and comment!
Excellent recipe! Easy, quick and flavorful. Will definitely make again ☺️
Is it possible to do without sour cream? I don’t have any on hand or anything to substitute it with.
Sour cream is pretty much key to a stroganoff…. but you could probably get away with just the cream of mushroom.
So good! Husband and kids really enjoyed this one!

My 10 year old made this for all of us and her siblings. She did great! We all loved it. Thank you for the great instructions. My husband took her grocery shopping & she bought it all herself. We will make more recipes from your site!
I LOVE THIS RECIPE my mom makes it and it’s the best!
Great – But not sure how much noodles to cook for this recipe or rice to cook with this recipe.
However much you want. This isn’t a recipe for noodles, just the stroganoff. Just cook some up and pour this on top 🙂
I used half a standard bag of wide egg noodles and mixed the cooked noodles in with the sauce and beef when everything was done, worked perfectly!
My husband doesn’t like mushrooms or the texture of onions so I substituted 1 teaspoon of onion powder for the onion and a can of cream of chicken instead of mushroom. It tastes great, we love it!
We also used some Worcestershire sauce to season the beef and added sliced crimini mushrooms while the sauce was simmering. We meant to add it earlier.
Thank you for the recipe. Yum
Great recipe for quick weeknight meal. True one pot meal!

Turned out so good! my husband doesn’t like sour cream but he ate this up! Ha! I think maybe he actually likes sour cream and doesn’t realize it. LOL It does’t come through as a strong flavor either.
Super super yummy!!! I used unsalted butter and low sodium beef broth since it’s what I had and since I was lacking salt in two places I added a packed of Lipton onion soup mix and it was delicious!!! I will for sure be making this again!
Yummy flavor! Thank you for the good recipe.
