I think it’s easiest to make one giant pop tart then cut it up into smaller Pop Tarts, but you could easily make and bake individual ones as well. You’ll just cut the pie crust into individual sizes, add the filling, crimp then bake just like you do this larger one.
Yes, you can. The brown sugar filling can be replaced with fruit pie fillings or other fillings if desired. You may want to change up the glaze on top too.

HOW TO MAKE BROWN SUGAR POP TARTS:
Preheat the oven to 375°F. Line a sheet tray with parchment paper and set aside. In a medium bowl, stir together the brown sugar, ground cinnamon, flour, and salt, and set aside.

Place the pie crusts on top of each other and roll them out to an even thickness. Place on the prepared sheet tray.

Trim the pie crusts to form more of a rectangle shape. Take the top pie crust off. Add the filling, allowing room along the edge, about 1 inch.

Lightly brush the edge with water. Place the other pie crust on top. Use a fork to crimp all around the edge and add holes on top.

Brush the entire top with the melted butter. Bake for 15-19 minutes until lightly golden brown.

Allow to cool and make the glaze. Whisk together the powdered sugar, cinnamon, vanilla, and milk in a medium bowl until smooth. The glaze should be thick but pourable. Once the pop tart is almost completely cooled, add the glaze to the center of the pastry to mimic the look of the pop tart.

Allow to set, then slice and serve.
